How to Order Coffee in Italy

Italian coffee culture is one of the world's most codified. The rules are real, they are generally enforced through social pressure rather than explicit policy, and following them signals that you understand and respect the culture you're visiting.

Stand at the bar

In Italy, coffee is drunk standing at the bar. This is not merely a custom; it is reflected in the pricing structure. Sitting at a table in a cafe costs more than standing at the bar, often significantly more. For espresso especially, the bar experience is the correct one: the coffee is made to be drunk quickly, while it's hot and the crema is intact.

The espresso

Un caffè means one espresso. This is the default order. It arrives in a small ceramic cup on a saucer with a small glass of water. Drink the water before the coffee to clean your palate. Drink the espresso in two or three sips, ideally within two minutes of it being pulled.

The cappuccino rule

Cappuccino is a morning drink. Ordering one after 11am marks you as a tourist, which is fine but noticeable. The rule exists because Italians believe that milk interferes with digestion and shouldn't be consumed with or after a meal. The cappuccino is specifically a pre-breakfast or breakfast drink.

Caffè macchiato and caffè lungo

Macchiato is espresso with a small amount of milk foam, good for those who find straight espresso too intense. Caffè lungo is espresso pulled with more water, producing a longer, less concentrated drink. Caffè americano is espresso diluted with hot water and is available but not traditional.

Paying

Pay at the cashier first, then take your receipt to the barista and order. This system operates in many traditional Italian bars and confused visitors who try to order directly at the bar. In modern cafes, this system has often been abandoned, but knowing it prevents awkward moments.
