The choice of pour over brewer affects the taste of your coffee more than most people expect. The differences are real, though not dramatic, and the right choice depends on what you value in a cup.

Hario V60

The V60 is the most widely used pour over brewer in specialty cafes worldwide. Its single large hole and spiral ribbed walls produce a fast drain that, when paired with the right technique, creates a clean, bright, transparent cup that highlights the origin character of the coffee. It is less forgiving than some other brewers: technique matters more with a V60 than with a Kalita Wave. Recommended for people who want to develop their brewing skills.

Chemex

The Chemex uses a thicker paper filter than the V60, which traps more of the coffee's oils and produces an exceptionally clean, clear cup. The large glass vessel also means the coffee stays warm for longer than single cup brewers. The Chemex is ideal for brewing multiple cups at once and for people who prefer a very clean, light body.

Kalita Wave

The Kalita Wave's flat-bottomed design and three small drain holes produce a more even extraction than the V60 and are more forgiving of inconsistent pouring. The cup tends to be fuller-bodied and slightly less bright than a V60 from the same beans. Recommended as a starting point for home brewers.

Origami

The Origami is a Japanese brewer that accepts both V60 and Kalita-style filters and can be used with a separate wooden or ceramic holder at different heights to affect flow rate. It is a flexible, elegant brewer that rewards experimentation.

Which one to buy

If you are just starting with pour over: Kalita Wave. If you want to develop technique and cup clarity: V60. If you brew for multiple people: Chemex. The differences are real but all produce excellent coffee when used with quality beans and reasonable technique.
