WHAT IT IS
A flat white is a double ristretto (short, sweet espresso) with a thin layer of microfoam poured over it, typically 5 to 6 oz. The ristretto base is sweeter and more concentrated than a regular espresso, which holds up better against the milk. The flat white has less milk than a latte and less foam than a cappuccino.
HOW IT IS MADE
Two ristretto shots (each about 0.75 oz) are pulled. Milk is steamed to create a glossy, velvety microfoam with tiny uniform bubbles. The milk is poured over the shots to about 5 to 6 oz total, with the foam integrated throughout rather than sitting on top as a separate layer.
WHAT IT TASTES LIKE
Strong, sweet from the ristretto base, and silkier than a latte. The coffee flavor is more prominent than in a latte because the ratio of espresso to milk is higher. Well-made microfoam gives it a cream-like texture without heaviness.
WHEN TO ORDER IT
When you want more coffee intensity than a latte but more milk than a cortado. When you want the barista to show off their milk texturing skills. When you want the signature drink of Australian and New Zealand coffee culture.
HOW TO ORDER IT
Say "flat white." Specify oat milk or dairy. At chains, clarify you want the small version (around 5 to 6 oz), not an enlarged interpretation.

Iced flat white: double ristretto over ice with cold milk. Oat flat white: with oat milk.
