WHAT IT IS

Vienna coffee (Wiener Melange or Einspänner) is a Central European coffee drink where a double espresso or strong black coffee is topped with a generous amount of whipped cream. The cream is not stirred in; you drink the coffee through the cream.

HOW IT IS MADE

A double espresso or strong filter coffee is poured into a glass. Whipped cream (sometimes sweetened, sometimes plain) is dolloped or piped on top. The Vienna coffeehouse tradition is specific about the glass and presentation.

WHAT IT TASTES LIKE

Bitter espresso initially, then the cream mellows the intensity as it mixes with the coffee. The contrast between hot bitter coffee and cold sweet cream is the experience.

At a Viennese-style coffeehouse. As a dessert coffee. When you want whipped cream on your espresso without ordering an affogato.

HOW TO ORDER IT

Say "Vienna coffee" or "Einspänner" at European-style cafes. At American shops, ask for "espresso with whipped cream."

Einspänner: the classic Viennese single shot with whipped cream. Wiener Melange: more like a cappuccino with whipped cream.
