How Decaf Coffee Is Made

Decaf coffee is regular coffee that has undergone an additional processing step to remove most of the caffeine before roasting. The decaffeination happens at a processing facility between harvest and roasting. The roaster receives already-decaffeinated green beans and roasts them like any other coffee. The method used has a meaningful impact on what flavor survives in the cup.

The Four Methods

Swiss Water Process: Green beans are soaked in hot water which dissolves caffeine and flavor compounds. The water is passed through activated carbon that traps caffeine but allows flavor molecules to pass through. New beans are soaked in this flavor-saturated water. Only caffeine migrates out. 99.9% caffeine removal, no solvents, best flavor preservation. The specialty coffee standard.

CO2 Process: Pressurized liquid carbon dioxide selectively dissolves caffeine while leaving most flavor compounds intact. Gentle on the beans, excellent flavor, expensive equipment. Methylene Chloride (MC): Common, inexpensive, FDA-approved, minimal flavor impact. Ethyl Acetate (EA): Marketed as "naturally decaffeinated," can add a slightly fruity note.

Swiss Water and CO2 produce the cleanest, most flavor-faithful decaf. If the bag says Swiss Water Process, you are getting the best available. Good decaf is worth seeking out. Find a specialty shop that takes their decaf program seriously.
