Cappuccino vs. Flat White
The cappuccino and the flat white are the two drinks that most clearly represent the Italian and Antipodean approaches to espresso and milk. They use the same ingredients. They deploy them with different philosophies.
The Cappuccino Philosophy
The cappuccino is about contrast. A layer of espresso at the bottom, steamed milk in the middle, and a layer of dense foam on top. You drink through the foam, which changes the texture of each sip. The drink starts airy and ends concentrated. In Italy, the cappuccino is a breakfast drink, not ordered after late morning. Whether you observe this convention outside Italy is up to you.
The Flat White Philosophy
The flat white is about integration. The milk is steamed with less air, creating a thin, velvety microfoam that merges with the espresso rather than sitting on top. The drink is uniform from first sip to last. No dry foam cap. No textural separation. Every mouthful tastes the same: velvety, smooth, espresso-forward. The flat white emerged from Australia and New Zealand as a rejection of the cappuccino's foam cap.
Which to Order
Order a cappuccino when you want texture contrast and something that feels lighter and airier. Order a flat white when you want uniformity and the milk to enhance the espresso rather than sit on top of it. Both are smaller than a latte and more espresso-forward.
