Cold Brew vs Iced Coffee: What Is the Difference

Cold brew and iced coffee get conflated constantly. Both are cold. Both are coffee. But they are produced differently and taste different in ways that matter if you care about what you are drinking.

Iced coffee: hot-brewed and chilled

Iced coffee is brewed hot and then cooled. The most common method is brewing a concentrated batch of drip or espresso and pouring it over ice. The heat extraction produces the same compounds as a hot cup of coffee. As the coffee cools, some of those compounds change, and as the ice melts, the coffee dilutes. The result is coffee that tastes like coffee that got cold.

The main advantage of iced coffee is speed. It can be made in minutes. The main disadvantage is that it can taste acidic and flat, especially as the ice melts and dilutes it further.

Cold brew: time-extracted, never heated

Cold brew is made by steeping coarsely ground coffee in cold or room-temperature water for 12 to 24 hours, then filtering out the grounds. No heat is involved at any point. The absence of heat fundamentally changes what gets extracted from the coffee.

Without heat, the compounds that produce acidity in coffee are largely not extracted. Cold brew is noticeably smoother and sweeter than hot-brewed coffee. It is also typically higher in caffeine per ounce because it is often served as a concentrate diluted with water or milk.

Which is better

Neither is objectively better. Iced coffee, done well, can be excellent. A flash-chilled pour over from a good specialty shop is one of the better ways to drink coffee in warm weather.
