These are not the same drink. They are not even close.

Iced coffee is hot coffee poured over ice. Cold brew is coffee brewed with cold water over 12 to 24 hours. The methods are fundamentally different, and the results are too. Knowing the difference is the difference between ordering what you actually want and being surprised by what arrives.

How Iced Coffee Works

Iced coffee starts as hot coffee. It is brewed with any hot method: drip, pour over, espresso. Then it is poured over ice. The flavor profile retains the character of hot coffee: acidity, brightness, origin-specific notes. If you like fruit-forward, bright coffee, iced coffee is your summer drink.

How Cold Brew Works

Cold brew is made by steeping coarse-ground coffee in cold water for 12 to 24 hours. No heat is ever applied. Because heat is what extracts most of the acidity and bitterness from coffee, cold brew is dramatically smoother and sweeter. The flavor profile tends toward chocolate, caramel, and nuts. The body is heavy and round.
